
Healthy Chipotle Sweet Potato Skins

These healthy chipotle sweet potato skins are stuffed with a chipotle-sweet potato filling, black beans, corn, and topped with cheese.

- corn400 g
- black bean400 g
- butter1 tbsp
- onion0.5 pcs
- chipotle pepper3 pcs
- cream cheese28 g
- sour cream0.3 cup
- salt1 tsp
- cilantro0.5 cup
- cheese6 tbsp
Instructions

Preheat oven to 350 degrees. Bake the sweet potatoes for 45-60 minutes.

Roast corn in a dry skillet over medium-high heat for 10 minutes until browned. Set aside with black beans.

Saute onion in butter until soft and translucent. Set aside.

Remove potatoes, cool slightly, cut in half, and scoop out flesh, leaving skins intact.

Mix potato flesh with cream cheese, sour cream, chipotle, and salt. Fold in beans, corn, onions, and cilantro.

Fill skins with mixture, top with cheese, and broil for 5 minutes until melted.
